Chia Seed Pudding

You can find chia seeds in any store nowadays. They have become very popular because they offer many health benefits and are very versatile. They are packed with many minerals and vitamins and are the best option for any person that follows a healthy diet.
The following recipe is very easy to make and you can adjust it to your own needs.
How to Make Chia Seed Pudding
First of all, you will need the following ingredients:
Coconut Milk: You can use homemade coconut milk, or buy it in stores. Both canned full fat coconut milk and coconut milk in the carton will work for this recipe. The only difference will be in the consistency of the pudding.
Chia Seeds: You can use either white or black chia seeds for this pudding. The white ones are almost translucent, which is great if you have kids because they won’t ask you about the black seeds in the pudding!
Sweetener: You can use maple syrup if you are not watching your calorie intake. However, if you are trying to cut calories, you can use stevia or any other artificial sweetener. You can adjust the sweetness according to your needs.
Time: You should leave the chia seeds into the coconut milk for at least an hour until they have completely soaked in. You can do this before you go to bed and let them soak during the night. All you need to do is cover the bowl with a lid or paper so that the pudding won’t dry out.
- 6 Tbsp. Chia Seeds
- 2 Cups Coconut Milk
- 1 Tsp. Vanilla Extract
- 2 Tbsp. Sweetener
- Topping: Shredded Coconut, Cinnamon, or Fresh Fruit (Optional)
- Put all the ingredients into a bowl and whisk them together.
- Put a lid on top of the bowl and keep it in the fridge for at least 1 hour.
- The mixture will become thick after the chia seeds will soak up the coconut milk.
- Stir the pudding and add some fresh fruit or cinnamon on top before serving.
